The warm chevre salad, with braised greens, Okanagan goat cheese, double-smoked bacon, caramelized onion, roasted garlic and an apple cider vinaigrette served at Shelter Restaurant in Tofino, British Columbia. The food at Shelter is the creation of Chef Joel Aubie and owner Jay Gildenhuys. Shelter tries to use local and organic ingredients whenever possible, with fish caught locally and chicken and vegetables brought in from various Vancouver Island locations.
